Baking Conversion Calculator
Convert your recipe
Five tools for the moment you are mid recipe with flour on your hands. Weigh ingredients, convert a whole recipe at once, translate oven temperatures, swap pans, and adjust for altitude.
Weights follow standard US baking references, with flour measured spoon and level. A US cup is 240 ml and a metric cup is 250 ml, so pick the one your recipe was written in.
Paste an ingredient list, one line each, and get it back in grams. Lines it cannot match are left exactly as they were so nothing goes missing.
Fan and convection ovens run hotter than the dial suggests, so recipes written for a conventional oven are usually dropped by about 20 °C or 25 °F. Most home ovens also drift, so an oven thermometer is worth more than any conversion.
Pan swaps are scaled by volume. Multiply every ingredient by the factor shown, then watch the bake rather than the clock, because depth changes timing more than quantity does.
Above about three thousand feet, lower air pressure makes leavening expand faster, liquid evaporate quicker, and sugar concentrate. Cakes rise then collapse, cookies spread thin, and bread over-proofs. These are the standard corrections.
These are starting points, not rules. Change one thing at a time and write down what you did, because the same elevation behaves differently for a sponge, a cookie, and a loaf of bread.
Built by Brown Butter Sugar, where every recipe begins with golden butter and cozy flavor.
Common baking conversions
The measurements home bakers reach for most, in one place. All weights are for level US cups unless noted, with flour spooned into the cup rather than scooped.

Butter by the stick
A US stick of butter is a quarter pound. British and Australian butter comes in blocks instead, which is why so many recipes stall at this line.
| Butter | Cups | Tablespoons | Grams | Ounces |
|---|---|---|---|---|
| ½ stick | ¼ cup | 4 tbsp | 57 g | 2 oz |
| 1 stick | ½ cup | 8 tbsp | 113 g | 4 oz |
| 2 sticks | 1 cup | 16 tbsp | 227 g | 8 oz |
| 4 sticks | 2 cups | 32 tbsp | 454 g | 16 oz |
Oven temperature conversions
Fahrenheit, Celsius, fan or convection Celsius, and British gas marks. Fan settings are the conventional Celsius figure less 20 °C.

Pan sizes and volumes
Capacity filled to the brim, with US and metric names for the same tin. Most batters want the pan between half and two thirds full, so a cake recipe rarely uses the whole figure.

Egg weights
Useful when a recipe is written in grams, or when you are scaling a batch and end up needing two and a half eggs. Weights are without the shell.
| Part | Weight |
|---|---|
| Whole large egg | 50 g |
| Large egg yolk | 18 g |
| Large egg white | 32 g |
| Whole medium egg | 44 g |
| Whole extra-large egg | 56 g |
| Whole jumbo egg | 63 g |
How to use this converter
- Pick your measuring style. US cups and Fahrenheit, or metric cups and Celsius. The switch sets every tool at once and remembers your choice.
- Convert one ingredient, or the whole list. The Ingredients tab handles a single line. The Whole recipe tab takes a pasted ingredient list and returns it in grams, keeping the original alongside so nothing gets lost.
- Check the oven. Enter the temperature in whatever the recipe used and get Fahrenheit, Celsius, fan, and gas mark together.
- Swap the tin if you need to. Choose what the recipe calls for and what you own, and you get a multiplier for every ingredient plus timing advice for the change in depth.
- Adjust for altitude last. Above three thousand feet, apply the corrections for leavening, sugar, liquid, and flour after everything else is scaled.
Every ingredient, cup to gram
The complete list the converter draws on, 216 ingredients in all. Weights are for level US cups with flour spooned rather than scooped. For a 250 ml metric cup, add about four percent.

Questions bakers ask
Why do bakers weigh ingredients instead of using cups?
A cup of flour can vary by thirty grams depending on whether it was scooped or spooned and how settled the bag was. That is a quarter of the flour in a cake. Weight removes the variable entirely, which is why every bakery and every professional recipe works in grams.
Why is one cup of flour 120 grams here?
Because the cup was filled by spooning flour in and leveling the top. Dipping the cup straight into the bag compacts the flour and gives closer to 145 grams, which is where most dry, heavy bakes come from. If your recipe was written by someone who scoops, their cup is heavier than this one.
Are US cups and metric cups the same?
No. A US cup is 240 ml and the metric cup used in the UK, Australia, and New Zealand is 250 ml. That is four percent on every wet ingredient, which compounds across a recipe. Both are available in the converter, so choose the one your recipe was written in.
How much is a stick of butter?
One US stick is half a cup, eight tablespoons, 113 grams, or four ounces. Two sticks make a cup. British and Australian butter is sold in blocks rather than sticks, which is why the measurement stops so many recipes in their tracks.
Do I need to change the temperature for a fan oven?
Yes. A fan or convection oven moves hot air across the food, so it cooks faster and browns harder at the same dial setting. Drop the temperature by about 20 °C or 25 °F from what the recipe says, and start checking earlier than the stated time.
Can I bake a 9 inch round cake in an 8 inch pan?
Not without adjusting. A 9 inch round holds 8 cups and an 8 inch holds 6, so the same batter sits considerably deeper. It will dome, crack, and take longer in the middle while the edges dry. Either scale the recipe down by a quarter or bake the extra as a few cupcakes.
Why do my cakes sink at high altitude?
Lower air pressure lets the leavening expand faster than the batter can set around it, so the cake rises quickly and then collapses when the structure cannot hold. Reduce the baking powder, raise the oven temperature to set the crumb sooner, and add a little liquid to replace what evaporates faster in dry mountain air.
How many grams is a cup of sourdough starter?
A 100% hydration starter is about 227 grams per cup, the same as butter, because it is roughly half flour and half water by weight. A stiff starter or lievito madre at 50% hydration is denser, closer to 250 grams per cup. Discard weighs the same as active starter, since fermentation changes the flavor rather than the mass.
What is a 2 lb loaf tin in inches?
A 2 lb loaf tin holds about 8 cups, which makes it the British equivalent of a 9 × 5 inch American loaf pan. A 1 lb tin holds about 4 cups and matches an 8 × 4 inch pan. The names describe the weight of bread dough they were built for rather than any dimension.
Why does my recipe fail in Utah or Colorado?
Most of the populated Mountain West sits between four and seven thousand feet, which is squarely in the range where sea level recipes stop working. Cakes rise fast and collapse, cookies spread thin, and bread over-proofs before the flavor develops. The altitude tab gives the corrections for your specific elevation.
Can I convert a recipe without weighing anything?
You can convert the numbers, but you cannot get the benefit without a scale. The whole point of grams is removing the variation that cups introduce. A basic digital scale costs less than a cake tin and will improve your baking more than any single ingredient upgrade.
How accurate are these weights?
They follow standard US baking references and match what most recipe developers use. Real densities shift with humidity, brand, and how long the bag has sat, so expect a few grams of variation either way. That range is far smaller than the thirty grams a cup of flour can swing depending on how it was filled.
How do I convert a recipe from cups to grams?
Paste the whole ingredient list into the recipe tab and it will convert every line it recognizes at once. For anything unmatched, look the ingredient up individually and write the grams next to the original line rather than replacing it, so you can compare the two the first time you bake it.
